Rock Candy

is an especially large sugar crystal which is created via a very slow, long crystallisation process in which refined sugar is used. Brown as well as white rock candy exists. Brown rock candy receives its colour from the caramelisation process in which caramel still sticks to the sugar molecules. Rock candy is offered in three different forms, either as very evenly formed single crystals (cube form, Kluntje), as a combination of many crystals, so-called rock candy conglomeration (crust candy, stick candy) and ground rock candy (Grümmel candy).
