Kombucha

This fermented drink made of tea was traditionally spread in the Asian and European areas and became known in Germany towards the beginning of the 20th century.

Black or gree tea, sometimes with herbal ingredients, is mixed with sugar and the so-called tea fungus. This fungus consists of a symbiosis of different yeasts and acid-forming bacteria. It was given this name due to its form which reminds of a tree fungus.

The alcohol, which is created during the fermentation which was caused by the yeast, is degraded to organic acid by the bacteria.

The final, liquid product is, apart from its traditional use as medicine, also popular as an energising refreshment. This contains rests of sugar, alcohol as well as vinegar and other organic acids.

Our Kombucha is made of an infusion of green tea and herbs as well as cane sugar. Maltodextrin is added in the drying period during which the alcohol is eliminated.
